White Chocolate Cookie Cake

Beware ! ..These white chocolate crispy creamy cold cookie cakes are sure to disappear from your refrigerator !.. Lock it or lose it ­čśë


Ingredients:
( for White Chocolate cookie cake )

For the cookie :
1 Cup – all purpose flour / plain flour / maida
1/2 cup – icing sugar ( or finely powdered regular sugar )
1/2 cup – powdered pistachios
100 gms – softened butter

For white-chocolate ganache :
250 gms – cooking White chocolate pieces ( or melts )
1/2 cup – cream
1/4 cup – coconut flakes / shreds ( fresh or dried )

For decoration / topping :

1/4 cup – powdered pistachios
1/4 cup – coconut flakes / shreds ( fresh or dried )
2 tbsp – red edible beads ( or any topping of your choice ) ..

Method
:

Step 1)
Get ready with all the ingredients

Step 2)
Make the white chocolate ganache:
  • Into a sauce pan, pour the cream and bring it to a boil
  • When it starts boiling, turn off the heat and add the cooking white chocolate
    pieces and let it melt ..
  • Once it is almost melted, add the coconut shreds, mix and remove from heat

Step 3) Preheat the oven to 180C / 350F

Step 4) Into a bowl, add the flour, sugar, powdered pistachio, softened butter and mix with your fingers into a crumbly dough..

Step 5) Take a small amount of dough, shape into a ball using your palms and gently press between the palms to make it look like a round cookie. Arrange them on a cookie sheet lined with parchment/baking paper..

Step 6) Bake at 180C / 350 F for 7 – 10 minutes or until the bottom edges turn light brown ( note: keep checking as this will be ready in 7 – 8 minutes )..

Once the cookies are done, cool them on a wire rack

Step 7) Coat the cookie with the warm white chocolate ganache. ( For this, dip the cookie in warm chocolate ganache, use 2 spoons to coat it completely and then slowly take out and place on a plate or on a cookie sheet lined with parchment )

Step 8) Immediately, sprinkle the toppings ( I used powdered pistachios, fresh coconut flakes and some edible red beads.. you can add any topping of your choice..

Step 9) Repeat for all the cookies and then refrigerate for 2 – 3 hours..

Now your crispy creme cookie cakes are ready to nom-nom .. ­čśÇ
