Chicken Fried Rice Recipe ( 2+ Toddler, kids-friendly family meal ) ..
One quick tasty chicken meal for the whole family ! ..
Ingredients: ( for chicken fried rice )
500 gms or 2 boneless chicken breast (cut into small pieces)
2 tbsp – oil
1 cup – green peas
1 onion ( chopped )
1 tbsp – coriander leaves ( chopped)
Spice paste to marinate chicken: ( make a paste with little water)
( 1/2 tsp turmeric powder, 1 tsp chilli powder, salt,
2 tbsp coriander powder, 1 tbsp fennel powder)
To cook the rice:
1 tbsp – oil
2 cardamom, 2 cloves, 1″ cinnamon
1 cup – Basmati rice
2 cups – water
pinch of pepper & salt to taste
Step 1) Get ready with all the ingredients ..
Step 2) Marinate the chicken with ‘to marinate ingredients ‘..
( turmeric, chilli, coriander powder, fennel powder, salt )
Cook the rice
Step 3) Heat a pan, pour 1 tbsp of oil and add the cloves, cardamom and cinnamon.
Step 4) Add the rice, water, pepper, salt. Cover and bring it to a boil ..
Step 5) Once it starts boiling, reduce to low and cook for 12 minutes ..
Fry the Chicken
Step 6) Heat a big pan and pour 2 tbsp of oil ..
Step 7) Add the marianted chicken and fry on medium-heat until slightly browned.. ( takes 10 -12 minutes )..
Step 8) Add the chopped onion, green peas, salt to taste and cook for 4 minutes..
Step 9) Add the ginger-garlic paste, coriander leaves and cook for 1 minute ..
Step 10) Add the cooked rice, gently mix and turn OFF the heat.
optional – taste tip: sprinkle some coriander leaves, pepper and mix ..
Cover and let it sit for 5 mintues before serving ..
Now you can serve and .. enjoy 😀 ..
To Serve 2 – 3 year Toddlers: Take some chicken into a bowl and shred it .. add some rice & peas, mix and serve ..
