Blueberry banana muffin

 

Quick Blueberry Banana Muffin ( for Toddler, Kids & Family )

No-Machine .. No-Whisk .. Blueberry Banana Muffins ..


Ingredients:
( for Blueberry Banana muffin )

1/2 cup – butter ( melted )
1/3 cup – sugar
1 egg
3/4 cup – milk ( thick/full fat milk )
1. 5 cups – all purpose flour / plain flour / maida
1 tsp – baking powder
1/4 tsp – vanilla paste ( or 1/2 tsp extract )
1 cup – blueberries
1 – banana ( mashed )


Method
:

Step 1) Preheat the Oven to 180 C / 350 F and grease the muffin tins with melted butter

Step 2) Into a bowl, add the melted butter, sugar and stir vigorously ( using a spoon ) for 30 – 40 seconds until creamy ..

Step 3) Add the egg and beat ( with the same spoon ) for 30 seconds..

Step 4) Add the vanilla and stir

Step 5) Add the milk and stir for 20 – 30 seconds ..

Step 6) Into a sifter or mesh strainer, add the flour, baking powder and mix..

Step 7) Sift the flour ( in 2 batches ) into the wet ingredients and fold in the flour..

Step 8) Mash the banana and fold into the batter

Step 9) Gently fold in the blueberries

Step 10) Pour into the muffin tins ( fill half )..

Step 11) Bake at 180 C / 350 F until golden brown on top ( or a toothpick inserted comes out clean ).. ( The baking time can vary from 12 – 20 minutes )..

Once the muffins are ready, let them cool on a wire/cooling rack and enjoy warm :)..

note: The baked blueberries remain hot for a longer time.. Let it cool completely before serving toddlers or kids..

I whipped the batter using a tablespoon.. no machine or whisk used and yet the muffins turned out super gorgeous and delicious ! .. This is one of those quick and tasty breakfast or snack recipe !! .. Try this way and enjoy 😀 ..
